Chef/owner Soerke Peters and business partner Denis Boaro of Basil have a great reason to pop the cork on a domestic sparkler or two today. They just received word that Basil earned a coveted two-star certification from the Green Restaurant Association. After nearly a year of hard work and partnerships with vendors like Eco Carmel, Peters and Boaro have managed to document sustainable and eco-friendly practices required by the independent certification agency. Long known for its delicious seasonal menus, Basil’s new chef/owner Soerke Peters is kicking it up a notch and aiming to become the first green-certified restaurant in Carmel village. But Peters isn’t going green just because it’s trendy. He was living the local, sustainable lifestyle in his native Germany long before it was fashionable. “I was twelve years old before I ever saw the inside of a supermarket,” he laughs, explaining that his family—particularly his grandmother— made everything from scratch. As a child, he remembers riding his bicycle to the dairy to pick up milk in the morning, then going to the local bakery to pick up bread. “This is coming full circle for me,” he says. READ MORE

A chef who moved to the U.S. based solely on what he’d learned from ‘Kojak’

When he was 5 years old, Soerke Peters had never met a chef. He’d never eaten in a restaurant and, “There was no Food Network,” he commented wryly. Yet in the coastal town of Wilhelmshaven, Germany, when everyone chose a costume for Carnival — what we call Mardi Gras — he wanted to dress up as a chef. His mother dutifully made him a little chef ’s coat. “People acted like it wasn’t very glamorous — like it was the worst thing ever,” Peters laughed, sitting across from me at Basil, the downtown restaurant he owns with business partner Denis Boaro. Table Talk: Freshness reigns at Carmel’s Basil

She said it tastes like the sea — like that’s a good thing — although it sounded kind of scary, and kelpy and the idea of black squid ink didn’t help, but since I was taking advice, I proceeded.
This was at Basil in Carmel, a courtyard restaurant reminiscent of a European off-street find, belying its location only yards off the San Carlos sidewalk. Lights sparkled and a fire pit was ablaze. At most of the tables sat guests who seemed chic and worldly (languages flowed like the restaurant’s signature homemade limoncello). READ MORE
